Simple Pasta Fillings: Whipped Ricotta Filling

Creamy, dreamy, and so simple. This whipped ricotta filling is what pasta dreams are made of — soft, fluffy, and just the right touch of indulgent. It’s the kind of filling that makes each bite feel like a little moment. Perfect for ravioli, mezzalune, or whatever shape you’re hand-folding today. Just a few ingredients, whipped into something so much more.




Ingredients

250 grams ricotta cheese

50 grams finely grated parmesan cheese

Salt and pepper to taste


Tools

Food processor

Piping bag or teaspoon


Add the ricotta cheese to the food processor and blend it at high speed for 60 seconds until light and airy. Add the grated parmesan cheese and resume blending for another 60 seconds until fully incorporated into the ricotta. Season to taste with salt and pepper, blending once more for a few seconds to ensure the seasoning is mixed in evenly. Apply to your pasta dough with a teaspoon or fill into a piping bag with a round tip to apply.
